Gluten-free Thanksgiving: a host's checklist for turkey, stuffing and gravy
Short answer: Choose a turkey labeled gluten free, not a pre-stuffed or broth-injected one; bake stuffing separately with gluten-free bread; thicken gravy with cornstarch or gluten-free flour; and keep separate serving spoons and butter. Ask your guest how strict they are, and let them serve first.

For a guest with celiac disease, the risk is not only the obvious bread. It is wheat in gravy, seasoning packets, and the same spoon used for everything. The National Celiac Association, Celiac Canada and Beyond Celiac give the same core advice: communicate early, ask how strict your guest is, and plan each dish separately.
Start with a conversation
Beyond Celiac recommends open lines of communication from the start, with a host who is sensitive to concerns about ingredients and cross-contamination, and who asks questions throughout the preparation. The National Celiac Association adds that if you are not cooking, an open conversation with whoever is cooking is the best way to get a safe meal. Offer your guest the option of bringing a dish they trust. Many do, and it takes pressure off everyone.
Dish by dish
Turkey. The National Celiac Association says to look for frozen turkeys labeled gluten free, and names Butterball, Honeysuckle White and Jennie-O as brands that list gluten-free options on their websites. Avoid turkeys that come with dressings and marinades made with gluten-containing ingredients. Celiac Canada says pre-stuffed turkeys are unsafe for celiac guests, and that frozen turkeys injected with broth should be avoided unless you are sure the broth is gluten free.
Seasoning. Be careful with seasoning blends that include wheat-based thickeners or fillers. Look for a gluten-free label, or mix your own from single spices.
Stuffing. Stuffing the bird with bread that contains gluten will contaminate the turkey. Bake stuffing in a separate dish. For the gluten-free version, use gluten-free bread, and keep it in its own dish with its own spoon. Serve any wheat stuffing separately.
Gravy. Many turkey and chicken gravy mixes contain wheat. Look for one with a gluten-free claim, or thicken your own with cornstarch or gluten-free flour.
Butter. Celiac Canada says to keep a separate butter dish for gluten-free items, typically because crumbs from a shared knife end up in the butter.
Naturally gluten-free dishes. The National Celiac Association's guest guide lists roasted vegetables, salads, cranberry sauce, mashed potatoes, sweet potatoes and a turkey that is unstuffed or stuffed with gluten-free stuffing.
Pie and dessert. Gluten-free pie crust mixes are available; the Celiac Disease Foundation notes that pre-made products and mixes are readily available at health food and grocery stores. A pie with no crust, such as a flourless dessert, also works.
Serving safely
Cook the gluten-free dishes first with clean equipment, and keep them covered. Put a separate spoon in each dish. National Celiac Association advice for guests is to slip into line first or ask the host if they can fill their plate before others, to reduce crumbs and shared spoons. As a host, offering that without being asked removes a hard conversation.

Questions people ask
Is a Thanksgiving turkey gluten free?
A plain turkey is, but some are not. The National Celiac Association says to look for turkeys labeled gluten free, and to avoid ones with dressings or marinades made with gluten ingredients. Check seasoning packets too.
How do I make gluten-free gravy?
Celiac Canada says to thicken it with cornstarch or gluten-free flour, not regular flour. Many ready-made gravy mixes contain wheat, so look for a gluten-free claim on the package.
Can stuffing be cooked in the turkey for a gluten-free guest?
No. Stuffing a turkey with gluten-containing bread contaminates the bird. Celiac organizations say to bake gluten-free stuffing separately, using gluten-free bread.
What else hides gluten at Thanksgiving?
The Celiac Disease Foundation says to watch for gluten in gravies, sauces, spices and drinks. The National Celiac Association also flags seasoning blends with wheat-based thickeners.
How should I serve a guest with celiac disease?
Ask how they like to be served. Many guests ask to go first, so crumbs and spoons are clean, and some bring a dish they trust. The National Celiac Association says to talk to the cook early.
