Thanksgiving 2026
How long to thaw a turkey: fridge and cold-water times by weight
Short answer: In the refrigerator, allow about 24 hours for every 4 to 5 pounds: 3 to 4 days for a 12 to 16 lb turkey. To have it thawed by Wednesday, Nov. 25, move it in by Saturday, Nov. 21. In cold water, allow 30 minutes per pound and change the water every 30 minutes.

If the turkey is frozen and Thanksgiving is on Thursday, Nov. 26, 2026, the only question that matters today is when it has to come out of the freezer. This page answers that, then gives you the full USDA tables and a rescue plan if the answer is “yesterday.”
Fridge thawing: the table and the calendar
USDA's rule is about 24 hours in a refrigerator at 40°F or below for every 4 to 5 pounds. The ranges below are the USDA's own. The last column is our arithmetic: the latest date to move a frozen bird into the fridge so that, even at the slow end of the range, it finishes thawing by Wednesday, Nov. 25 and leaves Thursday as margin.
| Turkey weight | USDA fridge time | Move to fridge no later than |
|---|---|---|
| 4 to 12 lb | 1 to 3 days | Sun, Nov. 22 |
| 12 to 16 lb | 3 to 4 days | Sat, Nov. 21 |
| 16 to 20 lb | 4 to 5 days | Fri, Nov. 20 |
| 20 to 24 lb | 5 to 6 days | Thu, Nov. 19 |
Butterball's Turkey Talk-Line gives a slightly more cautious rule of one day per four pounds, which is why many cooks round up. Rounding up costs you nothing: USDA says a turkey that has finished thawing in the fridge keeps for 1 to 2 more days before it must be cooked.
Keep the turkey in its original wrapper and set it on a tray or pan. Put it on the bottom shelf so nothing can drip onto food that is eaten raw.
Cold-water thawing: the table and the catch
Cold water is faster, but it needs attention and it commits you to cooking the same day. USDA allows about 30 minutes per pound.
| Turkey weight | USDA cold-water time |
|---|---|
| 4 to 12 lb | 2 to 6 hours |
| 12 to 16 lb | 6 to 8 hours |
| 16 to 20 lb | 8 to 10 hours |
| 20 to 24 lb | 10 to 12 hours |
How to do it: keep the bird in a leak-proof wrapper (if the wrapper is torn, bag it again), submerge it in cold tap water, and change the water every 30 minutes until it is thawed. Hot water is not allowed. Cook the turkey immediately after it thaws, and do not refreeze it raw.
The catch is arithmetic. A 16 lb turkey needs about 8 hours of cold water, and the roast itself takes 3¾ to 4¼ hours for a 14 to 18 lb bird at 325°F. If dinner is at 4 p.m., the bird must be in the oven by about 11:15 a.m., which means it was in the water at 3 a.m. Cold water is the right tool for a bird that is mostly thawed, not for one that went into the fridge on Wednesday.
Running late? The rescue plan
Say it is Monday, Nov. 23 and you have a frozen 16 lb bird. Work through these in order:
- Put it in the fridge today anyway. It will not be fully thawed by Thursday, but it will be partly thawed, which shortens the next steps.
- Wednesday night or Thursday early morning: finish in cold water. A bird that spent 2 or 3 days in the fridge needs only a few hours of water, not the full 8.
- Or cook it from frozen. USDA says this is safe and takes at least 50 percent longer. For a 14 to 18 lb bird at 325°F, USDA lists 3¾ to 4¼ hours when thawed, so plan on roughly 5 hours 40 minutes to 6 hours 25 minutes frozen. Remove the giblet bag with tongs once the bird is loose enough, and judge doneness only with a thermometer.
- Or switch the product. A turkey breast or split bird thaws in a fraction of the time. For the guests who would have eaten the dark meat, buy turkey thighs.
What not to do: leave it on the counter, put it in warm water, or leave a frozen bird in a car trunk or on a porch. USDA's reasoning is the same each time: the outside of the bird reaches 40°F or above while the middle is still hard.
Thanksgiving morning: how thawed is thawed?
The cavity should be free of ice crystals, and the legs should move freely. Reach in and take out the neck and giblet bag (USDA says to cook giblets separately). Pat the skin dry. Then check the thaw one more way: the thickest part of the breast should give when you press it, with no frozen core.
Fresh turkey? USDA says buy it no earlier than 1 to 2 days before cooking (Tuesday, Nov. 24 or Wednesday, Nov. 25) unless the tag has a “use by” date that covers Thursday. If you bring a fresh bird home earlier, freeze it.
Four cheap tools that make the thaw safer
Nothing here is required. These are the items that fix the three things that go wrong: a fridge that is not actually cold enough, drips on other food, and a bucket that is too small.

Taylor analog refrigerator/freezer thermometer
Every USDA time on this page assumes a refrigerator at 40°F or below. Many fridges run warmer in the door and at the front, and a thaw that sits above 40°F is in the range where bacteria multiply.
- Look for:
- A simple dial or digital appliance thermometer that stands or hangs on a shelf. Put it on the shelf where the turkey will sit and read it after 8 hours.
- Best for:
- Anyone with a crowded or older fridge, or a fridge they have never checked.
- Skip if:
- Skip it if your fridge shows a trusted digital readout and you have already confirmed it with a second thermometer.

Nordic Ware Naturals aluminum half sheet pan
USDA says to put the turkey in a pan or container so juices cannot drip onto other foods. A rimmed pan under the bird keeps raw juices contained, and it is the same pan you can use for cooked sides later.
- Look for:
- A rimmed half-sheet pan with sides at least an inch high, sized to fit your lowest fridge shelf.
- Best for:
- Anyone thawing in a fridge shared with produce, dairy and leftovers.
- Skip if:
- Skip if you already own a large roasting pan that fits the bottom shelf; it does the same job.

Food-grade 5-gallon bucket with lid (ePackageSupply)
Cold-water thawing needs the whole wrapped bird fully under water. A food-grade bucket or a clean cooler is the container that makes that possible without tying up the kitchen sink for hours.
- Look for:
- A food-grade bucket or tote large enough to submerge a 20 lb bird with room for water to circulate, with a lid for fridge or garage staging.
- Best for:
- People who are behind schedule, or have a bird over 16 lb and a sink that is too small.
- Skip if:
- Skip if you are thawing in the fridge on schedule. Never use a household trash bag or an unlabeled paint bucket.

Thawing is only half the safety story. A turkey is safe at 165°F in the thickest part of the breast, the innermost part of the thigh and the innermost part of the wing, and a bird that was thawed in a hurry can cook unevenly.
- Look for:
- A fast, readable probe with a long stem, so you can check three spots without leaning into a hot oven.
- Best for:
- Every turkey cook, especially anyone cooking from partly frozen.
- Skip if:
- Skip if you already own one you trust.

Next steps
Once the thaw is on the calendar, the rest of the week follows. The prep timeline shows what to do on each day, the one-oven schedule shows when the turkey, sides and rolls get their turn, and the leftovers guide covers the two-hour and four-day rules. Questions people ask
How many days does it take to thaw a 20 pound turkey?
USDA gives 4 to 5 days in the refrigerator for 16 to 20 lb and 5 to 6 days for 20 to 24 lb. A 20 lb turkey sits on the boundary, so allow 6 days. For Thanksgiving on Nov. 26, 2026, move it in by Thursday, Nov. 19.
Can you thaw a turkey on the counter?
No. USDA says counter thawing is not safe: the outside of the bird warms into the 40 to 140°F Danger Zone while the center is still frozen. Use the refrigerator, cold water, or, for a small bird, the microwave.
How long can a thawed turkey stay in the fridge?
A turkey thawed in the refrigerator can stay there for 1 to 2 days before cooking. It can also be refrozen without cooking, with some loss of quality. A turkey thawed in cold water or the microwave must be cooked right away.
Can you cook a turkey from frozen?
Yes. USDA says it is safe, and it takes at least 50 percent longer than a fully thawed bird. A frozen 14 to 18 lb turkey needs roughly 5 hours 40 minutes to 6 hours 25 minutes at 325°F, so use a thermometer and plan the day around it.
Do you have to rinse a turkey after thawing?
No. USDA says it is safest not to wash raw turkey, because splashing spreads bacteria around the kitchen. Pat it dry with paper towels instead. If you do rinse it, clean and sanitize the sink and counters afterward.
