Thanksgiving 2026
Thanksgiving leftovers: how long they last and how to store them safely
Short answer: Refrigerate Thanksgiving leftovers within 2 hours of cooking (1 hour if the room is above 90°F). Use refrigerated turkey, stuffing and gravy within 3 to 4 days, which is by Monday, Nov. 30, 2026, and freeze the rest for 2 to 6 months. Reheat to 165°F.

The turkey is not the risk. The risk is the next 48 hours: the leftovers that sit on the counter, the deep pot of stuffing that cools slowly, the gravy that gets reheated half-way. These are the USDA's rules, turned into dates for 2026.
The three rules
- Two hours. Get leftovers into the fridge within 2 hours of cooking. If the room is above 90°F, it is 1 hour. This is the rule that turns the end of dinner into a task: set a timer at the start of the meal, not the end.
- Four days. Refrigerated turkey, stuffing and gravy should be used within 3 to 4 days. Thanksgiving is Nov. 26, so Monday, Nov. 30 is the last safe day for the 4-day rule, and Sunday, Nov. 29 is the 3-day mark.
- 165°F. Reheat everything to 165°F, measured in the center.
How to cool leftovers quickly
USDA says to divide leftovers into smaller portions and use shallow, covered containers. In practice that means:
- Carve the turkey off the bone and pack the meat in shallow containers. A whole carcass takes hours to cool.
- Spread stuffing and mashed potatoes in a layer 2 inches deep or less.
- Pour gravy into a shallow container, not the gravy boat.
- Do not wait for food to cool on the counter first. Hot food in shallow containers can go straight into the fridge.
What to freeze, and for how long
USDA's guidance is 2 to 6 months for quality for frozen Thanksgiving leftovers. Safe-indefinitely applies at 0°F, but the texture of turkey and gravy declines.
| Item | Fridge | Freezer, for best quality | Notes |
|---|---|---|---|
| Sliced turkey | 3 to 4 days | 2 to 6 months | Freeze in portions with a spoonful of gravy |
| Stuffing | 3 to 4 days | 2 to 6 months | Flat bags freeze and thaw quickly |
| Gravy | 3 to 4 days | 2 to 6 months | Freeze in ice cube trays, then bag |
| Mashed potatoes | 3 to 4 days | Freezes with a texture change | Best used in soups or patties |
| Cranberry sauce | Longer than the 4-day rule | Freezes well | Keep in a clean jar |
| Pumpkin and custard pie | 3 to 4 days | Not recommended | Refrigerate within 2 hours of baking |
The pie and cranberry rows are our judgment; USDA's guide applies specifically to turkey, stuffing and gravy. The pie row follows the standard custard guidance: refrigerate promptly and finish in a few days.
Reheating
USDA says to reheat turkey in a 325°F oven, covered, with a little broth or water to keep it moist, until it reaches 165°F. In the microwave, cover, rotate, and let it stand. Check with a thermometer in several spots, because microwaves leave cold spots. Cold turkey is safe too, if it has been kept cold.
Sending food home with guests
Say it at the door: “Please eat this by Sunday or freeze it.” Pack in containers you do not need back. Skip packing anything that has been sitting on the table for more than two hours. Hot dishes should be cooled before they go into a car for a long ride.
If you were a guest
If you took leftovers home, the same clock applies: Thursday dinner means eat by Monday. If you were out of the house for hours with a dish, remember that food that sat at room temperature on the car seat is subject to the same 2-hour rule.

Questions people ask
How long can Thanksgiving leftovers sit out?
No more than 2 hours at room temperature, or 1 hour if the room is above 90°F, according to USDA. Discard anything that sat longer. That includes turkey, stuffing, gravy, potatoes and pie with custard.
How long are Thanksgiving leftovers good in the fridge?
USDA says to use refrigerated turkey, stuffing and gravy within 3 to 4 days. For Thanksgiving on Nov. 26, that is Monday, Nov. 30. Anything you will not eat by then should go in the freezer.
Can you freeze Thanksgiving leftovers?
Yes. USDA says leftovers frozen at 0°F stay safe indefinitely, and 2 to 6 months is recommended for quality. Freeze turkey, stuffing and gravy in small portions so each one thaws quickly.
What temperature should leftovers be reheated to?
165°F, measured with a food thermometer. USDA suggests adding a little broth or water and covering turkey in the oven at 325°F or higher to keep it moist.
Can you eat cold turkey leftovers?
Yes. USDA says cooked turkey can be eaten cold or reheated, as long as it was refrigerated properly within 2 hours and is within the 3 to 4 day window.
