Thanksgiving cleanup plan: what to do in the first 2 hours after dinner

Updated October 24, 20263 min readBy the Gift & Hearth editors

Short answer: Put leftovers away first: refrigerate within 2 hours of cooking, divided into shallow covered containers, then eat within 3 to 4 days. After raw turkey, wash boards, utensils and counters with hot soapy water, then sanitize with 1 tablespoon of unscented liquid bleach per gallon of water.

The most important thing after Thanksgiving dinner is not the dishes. It is the clock. USDA says leftovers should be stored within two hours of cooking, and within one hour if the room is above 90°F. That gives you the order: food first, then dishes, then the counters.

The first 2 hours: leftovers

  1. Set a timer when dinner is served, using our host checklist.
  2. Carve the rest of the turkey off the bones. USDA says dividing leftovers into smaller portions, including carving the turkey, helps them cool more quickly.
  3. Pack in shallow, covered containers. USDA says shallow containers cool food faster, in the refrigerator or freezer.
  4. Date the containers. Most leftovers keep for 3 to 4 days in the refrigerator; USDA's Thanksgiving guide says up to four days, or until the Monday after Thanksgiving.
  5. Freeze what you will not eat in time. Leftover turkey and casseroles hold best quality for roughly 2 to 6 months in the freezer, per USDA.
  6. Discard anything left out longer than 2 hours. This includes the dish at the end of the table.

USDA's cold storage chart gives 3 to 4 days for gravy, stuffing, turkey and casseroles in the refrigerator; see our leftovers storage guide for the full table.

Then the raw-turkey cleanup

After handling raw turkey, USDA says to wash cutting boards, utensils and countertops with soap and hot water. After washing, sanitize cutting boards and surfaces with 1 tablespoon of unscented liquid chlorine bleach per gallon of water. Always wash hands with soap and water for 20 seconds before and after handling raw poultry.

If you rinsed the turkey in the sink, USDA says to thoroughly clean and sanitize the sink and surrounding areas. USDA's advice is that it is safest not to wash raw turkey at all.

Dishes, in order

  1. Pots and pans with leftover food: empty first, so food goes into containers and not down the drain.
  2. Glassware and china: run these in the dishwasher.
  3. Roasting pan: soak while you do the rest.
  4. Cutting boards and knives: wash, sanitize if used for raw turkey, then dry.
  5. Counters and sink: last, since everything else will have used them.

Assigning helpers

A cleanup with a list is quicker than one without. Give each helper one job, such as:

  • Food packer: containers and labels
  • Dishes: loading and running the dishwasher
  • Counters: wiping and sanitizing
  • Trash and recycling: bags and bins
  • Table: clearing and wiping

The people who do not know the kitchen can still do the table, the trash and the drying.

Before you go to bed

Check that the oven and burners are off, since cooking fires peak on Thanksgiving; see our kitchen fire safety checklist.

Four items that make cleanup faster

The two bottlenecks are somewhere to put the food and somewhere to put the dishes. These picks address both.

  1. Pyrex Simply Store glass food storage set (12-pack)Our pick
