Thanksgiving 2026
Thanksgiving pie timeline: what to bake when, and which pies must be refrigerated
Short answer: Homemade pumpkin, pecan and custard pies are egg-rich and must be refrigerated after baking and cooling, and not left out more than 2 hours. They keep up to 4 days in the fridge and about 2 months in the freezer. Fruit pies can sit loosely covered at room temperature for up to 2 days.

The question that comes up every year is whether the pumpkin pie has to go in the fridge. For a homemade pie, it does. The advice comes from the USDA by way of two university extension services, and it covers pumpkin, pecan, custard and meringue pies.
Which pies need refrigeration
Iowa State University Extension, relaying USDA, says that all egg-rich pies should be refrigerated after baking and cooling, unless they will be served within 2 hours of baking. Pumpkin and pecan pies belong to this group, along with custard and meringue pies. Illinois Extension lists the ingredients to watch for: eggs, cream, sour cream, cream cheese and milk, including evaporated or condensed milk. The reason is that bacteria grow quickly between 40°F and 140°F.
| Pie type | Storage after baking | How long it keeps |
|---|---|---|
| Pumpkin, pecan, custard, meringue (homemade or fresh bakery) | Refrigerate after cooling; no more than 2 hours out | Up to 4 days in the fridge; freezer for about 1 to 2 months best quality |
| Cream or chiffon | Refrigerate; no more than 2 hours out | Within the 3 to 4 day leftover window; often does not freeze well |
| Fruit pies without dairy | Loosely covered at room temperature | Up to 2 days at room temperature; a few days longer in the fridge |
| Store-bought, sold unrefrigerated | May stay at room temperature until cut | Check the sell-by date; refrigerate after cutting |
How to chill a pie without a soggy crust
Iowa State's method: cool the pie completely, set it in the refrigerator uncovered until it is chilled, and then wrap loosely in plastic or use a pie cover. Covering a warm pie traps condensation, which makes the crust soggy and gives bacteria a good place to grow. If the pie has not cooled completely within 2 hours, put it in the refrigerator unwrapped to keep cooling.
A pie timeline
Pies are the easiest dish to make ahead, because they have to be chilled anyway. A plan that fits around the oven:
- Sunday to Tuesday before: bake the pies and chill them. Pumpkin keeps up to 4 days in the fridge, so a Tuesday bake is safe for Thursday.
- Wednesday: bake fruit pies or finish a lattice, since fruit pies are fine at room temperature for up to 2 days.
- Thursday morning: take pies out of the fridge a few minutes before serving. Iowa State notes that this lets the filling soften for a cleaner slice.
- At dinner: serve within 2 hours of taking them out. If dessert will be later, leave the pie in the fridge until then.
Our make-ahead guide covers the rest of the menu.
If you bring a pie
Cool it, chill it, and keep it cold during the trip. A pie that rides in a warm car for an hour has used up half of its 2-hour room-temperature allowance. A cooler with ice packs or an insulated bag is a better choice than the back seat.
Freezing pies
Iowa State says whole pies, halves and slices can be frozen, with best quality for about 1 to 2 months and safety for longer if kept at 0°F. Illinois Extension warns that custard and cream pies often do not freeze well, so it is better to freeze pumpkin and fruit pies, not cream or custard ones.
Tools that help bake, cool and carry pies
Pies need cooling, chilling and a safe trip to the table. A few simple tools cover all three.

How long does pumpkin pie last in the fridge?
Up to 4 days in the refrigerator, and about 2 months in the freezer for best quality, according to University of Illinois Extension, citing USDA. Frozen pie stays safe past that if kept at 0°F.
Do fruit pies need to be refrigerated?
Fruit pies without dairy can be stored loosely covered at room temperature for up to 2 days, per University of Illinois Extension. They keep a few days longer in the refrigerator.
How long can pie sit out during dinner?
Two hours is the limit for egg- and dairy-based pies. If you need to hold a pie longer, Iowa State suggests putting it on ice to keep it chilled.
