Thanksgiving for two: a small menu with exact amounts and a schedule

Updated October 24, 20263 min readBy the Gift & Hearth editors

Short answer: For two, roast a bone-in turkey breast of about 3 to 4 pounds (1 to 1½ pounds per person), cooked to 165°F, with about 1 pound of raw potatoes, 1½ cups of stuffing and a small pie or two tarts. Use a thermometer, not a timetable: USDA's breast times start at 4 pounds.

Thanksgiving for two does not need a 15 pound turkey and a week of sandwiches. It needs a breast, four good sides, one dessert, and a schedule that works with a small oven. Below are the amounts and the plan.

The right amounts

Use the same published rules as for a large table, scaled down: turkey at 1 pound per person (USDA) to 1½ pounds (Butterball, with leftovers); stuffing at ¾ cup per person; ½ pound raw potatoes per person; ¼ to ½ cup cranberry sauce; one slice of pie.

Dish For two Notes
Bone-in turkey breast 3 to 4 lb A split breast also works
Raw potatoes 1 lb About 1½ to 2 cups mashed
Stuffing 1½ cups A small dish, about 1 quart
Cranberry sauce ½ to 1 cup Canned or homemade
Vegetable ½ to 1 lb Green beans, Brussels sprouts or carrots
Pie 2 slices One small pie, two tarts, or two slices from a bakery
Gravy 1 cup About ½ cup each; our rule of thumb

The menu

  1. Roast turkey breast with a quick pan gravy
  2. Mashed potatoes
  3. Stuffing in a small dish (bake outside the bird; USDA's 165°F center rule applies)
  4. One vegetable
  5. Cranberry sauce
  6. A pie, two tarts, or a baked apple each

If you want a fifth side, pick one that needs no oven.

The timing problem, and how to solve it

USDA's roasting table for turkey breasts begins at 4 pounds (1½ to 3¼ hours at 325°F). A 3 pound breast is smaller than any published row, which means there is no official time for it. That is fine: cook to temperature. Put the probe in the thickest part of the breast and check from about 60 minutes in. The bird is done at 165°F; USDA also says to let it stand 20 minutes before carving.

The schedule (dinner at 5:00 p.m.)

Time Task
2:30 p.m. Oven to 325°F; breast out of the fridge, patted dry, seasoned
2:45 p.m. Breast in
3:45 p.m. First temperature check (about 1 hour in)
4:00 p.m. Potatoes on to boil; stuffing dish assembled
4:15 p.m. Check again; when 165°F is reached, remove and tent with foil
4:15 p.m. Oven to 375°F; stuffing in (about 25 to 30 minutes, until 165°F in the center)
4:30 p.m. Gravy from the pan drippings; mash potatoes; vegetable on the stove
4:45 p.m. Carve; dish up
5:00 p.m. Dinner

The stuffing baking time depends on the recipe. A thermometer in the center, at 165°F, is the check.

Thawing for two

A 3 to 4 pound breast takes about one day, up to two, in the refrigerator, following USDA's 24 hours per 4 to 5 pounds. Move it from the freezer on Tuesday, Nov. 24 at the latest. If it is a bigger bone-in cut, use the thaw chart.

Leftovers

Two people can eat a 3 to 4 pound breast over about three meals, which is exactly the length of the USDA window of 3 to 4 days for refrigerated turkey. Slice what you will not eat that night off the bone into a shallow container within 2 hours. See leftovers for dates and what freezes well.

Small-kitchen tools that matter more at this size

A small bird cooks quickly and finishes fast, so accuracy matters more than equipment.

  1. ThermoWorks Thermapen ONE instant-read thermometerOur pick

USDA's roasting table for turkey breasts starts at 4 pounds, so a 3 pound breast has no published time. The thermometer reading, 165°F in the thickest part, is the only reliable answer.

  2. Small baking dish (1 to 1.5 quart)

Questions people ask

What size turkey breast for two people?

About 3 to 4 pounds of bone-in breast: 1 pound per person is USDA's rule, and 1½ pounds per person leaves leftovers for sandwiches. A boneless breast of 2 to 3 pounds works if you prefer.

How long does a small turkey breast take to roast?

USDA's table covers breasts of 4 to 8 pounds at 1½ to 3¼ hours at 325°F. A smaller breast needs less. Start checking at 1 hour and stop when the thickest part reaches 165°F.

Is it cheaper to cook a whole turkey or a breast for two?

A whole turkey can cost less per pound, but you also take on leftovers you may not eat. A breast or a few thighs fits a household of two and thaws in a day or two in the fridge instead of four or five.

How do I thaw a turkey breast?

Use the refrigerator: USDA's rule is about 24 hours per 4 to 5 pounds, so a 3 to 4 pound breast takes about a day, up to 2. Start it on Monday or Tuesday for Thursday dinner.
